Happy thanksgiving to all my prepper friends.  Even with all the trouble in the world, we have much to be thankful for.

It is hard to feel poor when you sit down to a beaver roast with all home grown veggies and a just made from scratch pumpkin pie with whip cream.


We are the lucky ones.

Now I have to say, THAT sounds interesting. Pray tell how you prepare and cook a beaver roast.

Well there is nothing to fancy.  I find the more spices that are used the less game flavor there is.  So just black pepper and near the end add salt to taste.  Today I slow cooked four legs in a crock pot, about three quarters way through added turnip, carrots, potatoes and onion in that order and about fifteen minutes between each.......... ho and four garlic cloves put in with the meat.  I started from frozen meat.  Now, normally I would have put a pastry on top for the last twenty minutes.  We had my bread instead.  Its bush cooking in a crock pot.

It was and the other good news is that, its just as good the second day, if not better.


Today what is left will become a stew.  I add new veggies and this time I will thicken the stock with a spoonful of flour and I will be doing a pastry top for sure.  This will be followed with a fresh picked, thick apple pie and some apple dumplings.  Whipped cream on both.


I hope your Thanksgiving was good as well.
